Coffee overnight oats

When I have an early start, the last thing I want to do is mess around with breakfast, so I thought I'd give overnight oats a try. They've been popular for years because you can prep a whole batch, they last up to 5 days in the fridge, and they're so versatile, you can alter the recipe to suit any taste.


I wanted to try coffee overnight oats because I had a super early morning and wanted an extra kick of caffeine to wake me up. I also made one of my easy peasy hazlenut iced coffees, so i was WIDE awake!



Ingredients:

  • 1/2 cup / 40g rolled oats

  • 1 1/2 tsp / 15g chia seeds

  • 80ml brewed coffee

  • 125ml almond milk or soya milk

  • 60g plain dairy free yoghurt

  • 2 tsp agave syrup or maple syrup

  • extra yoghurt for topping

  • sprinkle of nuts



Method;

  1. Before you go to bed, grab a mason jar with a lid, and add the oats, chia seeds, milk, brewed coffee, plain yoghurt and agave syrup.

  2. Mix, mix, mix, pop the lid on and refrigerate.

  3. This will thicken overnight (or 3 hours if you make it in the day)

  4. In the morning, top with some extra yoghurt and a sprinkle of chopped nuts.

  5. Enjoy!



FYI -

Rolled oats work best, great texture

Steel cut oats would be too coarse

Instant oats work, but are too soft in my opinion

Also, this recipe is vegan, but you can use whichever milk & yoghurt you prefer.
